@Q-Checker.  Yes, I always use the no sugar gelatin and pineapple.  The low fat cottag3 cheese I use has no sugar and if Cool whip is available without sugar, I use it.

Add chicken or turkey chunks to a traditional Waldorf salad, and you can serve it for lunch

@Desertdi.  I buy small cans of cooked chicken and use for things like this salad of yours.  They're very inexpensive and come in hand for many things.

@Kachina624 i just made the Orange Dump Salad with low-fat cottage cheese, zero sugar 3 oz orange Jello mix, 16 oz of crushed no sugar added Pineapple, 15 oz Manadin orange segments in light syrup ( the only type I could get) and 8oz Zero Sugar Cool Whip. 

 

Given confidence from you, I didn't worry about the fruit and Cool Whip being more than the original recipe. I drained the fruit. I didnt bother draining the cottage cheese, it had very littke whey like you said. . 

 

It is chilling in the fridge right now. From the smell and taste of my mixing/folding spatula....this is going to be creamsicle heaven that I dont have to feel guilty about and SUPER easy.

@Kachina624  I am shopping for this soon, going to bring it to my daughters for thanksgiving. Do you think I should double for 8 people or is this enough?  Of course there will be lots of other food so I am thinking I won't need to?

@spumoni99.  It's hard to say.  I'd probably double it knowing I'd scarf down the left overs.  In my fridge, it goes fast.

@Kachina624  Leftovers!  Good idea! I can leave some at my house for me also! My daughters fridge is always filled to the max, there are 5 of them, they need a garage fridge!
