I would nix the chicken in the pasta salad and just add more vegetables. Then I would just make a meat and cheese tray. Add some chips and some lucious cookies or brownies to the menu and you are good to go.

What a sweet gesture to make! You have a tender heart for sure. I love your salad recipe. Now go with what your gut tells you. We could give you endless recipes but you know these people. Whether it is chicken salad on croissants, a muffaletta, a giant sub, sloppy joes, or one of the many baked slider recipes, or some kind of wrap, you can ask or google recipes. There is an old saying, "You can't please everyone." Do what makes sense for the situation and your budget and time. Those involved will be happy that you acknowledge their efforts. If you can narrow things down a bit, maybe you would get more targeted answers, but something tells me after reading lots of your posts, you've got this!

(and if you do the chicken pasta salad, maybe consider deleting the cashews (many are allergic and would have to skip it) Realize not everyone can be accommodated, but nuts are a big allergy. (at least for me because I have them!)

OK apparently it's like a ham & cheese on a Hawaiian roll, open roll, build w/ham and cheese, drench top of meat/cheese with mix of brown sugar, mustard, Worcestershire, etc, cover with top roll and bake for 15 min until cheese is melted.

However, I take the whole slab of Hawiian rolls and slice it. That way I don't have to slice each individual roll. It's a kind of an unusual taste, because you have the savory inside and the sweet outside. It would work with regular rolls as well, it you don't want such a sweet taste. @Mj12 has it pretty much right.

Why not have a meat and cheese tray w/different kinds of bread or just sandwich buns. Then make a couple of side salads/dishes and dessert. That way you don't have to limit it to one sandwich.
