Is that your soup? Looks tasty. What are you using for liquid?

3 slices bacon cut into 1/2-inch pieces

1 onion, chopped

1 lb leeks, white and light green parts halved lengthwise and sliced thin

4 cups chopped green cabbage

2 tsp minced garlic

2 tbsp flour

1/2 cup white wine

4 cups chicken broth

12 oz red potatoes, cut into 3/4-inch chunks

1/2 cup heavy cream

Fry bacon in Dutch oven until crisp.  Drain bacon on paper towel to use later.  Stir onion, leeks, and cabbage in bacon fat in pot over medium heat.  Cover and cook for 10 mins to tenderize vegetables.  Stir in garlic and cook for 1/2 min., then flour for 1 min.

Stir in wine and simmer for 2 mins. to thicken.  Stir in broth and potatoes and bring to a boil.  Reduce heat to simmer for 15 mins. to tenderize potatoes.

Off heat stir in cream.  Sprinkle with bacon in bowls.

I make a veggie soup using a large can of V-8 juice as a base.  I add a large bag of mixed frozen veggies and about half a head of shredded cabbage.  If you want protein, add some diced  tofu.  My body doesn't crave it but I eat it anyway.
