anyone have any tried and true that just always turn out.I seem to be making a lot of dry lumps these days.I really want to find a low fat and suger blueberry muffin recipe that rises well and tastes good...is that all possible?

I just got this book but I found an Oat Muffin with Blueberries on page 306 of Paula Deen's newest cookbook, where she cuts the fat. Check it out at your library. She has some good ones I want to try eventually. She's cut the fat and lost weight since she's diabetic.  That runs in the family, so I want to see how it is. I have some of her other cookbooks, and she has some great tasting food. (Probably why the diabetes).

There is not a library anywhere near me, so I'll see if I can google it and find the recipe on-line.

I found the recipe on a site where they are selling the book. It lists all the ingredients but only the beginning of the instructions. You can probably figure it out though. Search Paula Deen cuts the fat on Google, click on more & click on books, click on the link for her new cookbook. On this page on the left side their is a text box that has paula deen cuts the fat, click on the text box & add oatmeal blueberry muffins, click go, next page click on the recipe to view it.

I cannot help with a blueberry muffin, but here's a link to Bran Flax Muffins that I posted a while back.  They are healthy, moist, dense, filling and delicious (imho). 

Strive for respect instead of attention. It lasts longer.

Do you think flour choices matter to how the muffin rises?i seem to make small dry or dense muffins lately.Thank you to all who responded cause I started this and then forgot I did...sorry
