Orange Chicken

 

4 chicken breast halves...skinned and boned

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 cup flour

1 Tablespoon butter

2/3 cup chicken broth

1 1/2 teaspoons cornstarch

1/2  - 3/4  cup orange marmalade (according to taste)

1 1/2 Tablespoons balsamic vinegar

Orange slices

 

Place chicken between 2 sheets of plastic. Flatten with a mallet or rolling pin. Sprinkle with salt and pepper then dredge in flour.  Melt butter in skillet over medium heat. Add chicken and cook til done, turning once. Remove from skillet and keep warm. Meanwhile, combine broth and cornstarch. Stir in marmalade. Stir broth mixture into skillet. Cook stirring constantly until thickened. Stir in vinegar.Reduce heat to medium low. Add chicken, turning to coat. Cook one or two additional minutes or til thoroughly heated. 

Garnish with orange slices.

I am going to try this tonight. I have all the ingredients on hand too. I love orange chicken. Thanks for passing it on.
