@jannabelle1.  I can't stand those thick, gummy, noodles some people call dumplings.  My mom also made this recipe.  It's in the old stove top MiroMatic pressure cooker cookbook.

@Kachina624, that could very well be where my mother got the recipe. Both she and my dad used a pressure cooker for decades. It's an excellent dumpling recipe for sure and the only one I've ever used.

Meredith Blue Jean Chef had a pressure cook recipe, I did stove top.

 

Difference for me was leaving out the carrots and searing whole chicken legs vs white meat.

 

Fresh rosemary & thyme, celery, oniions, garlic, chicken stock.  What was a big difference was 3/4c white wine.  Wow, this changed it so much, really liked it.

 

Meredith also suggested to use a beurre manie to thicken, never heard of it before...it's 1tbs flour mixed with 1tbs butter.  Really changed the flavor and was delicious.  Just made sure I simmered it long enough to get out the flour flavor.  

 

Topped with parsley and voila a wonderful dish.

The Chicken stew that I'm use to, "Stewed Chicken" or "Pollo Guisado," is made with tomato sauce. It has potatoes, onions, carrots,  garlic, olives, bay leaves, garlic, oregano, sazon, sofrito, stock and of course, chicken!🐔😋

 I’ve heard this type of southern-style dumplings referred to as “slick” dumplings (or chicken and slicks), since they are noodle-like, flat dumplings instead of biscuit-like, fluffy dumplings.

I googled "Meredith Blue Jean Chef chicken stew recipe." The official name is "Instant Chicken Stew." It's an Instant Pot recipe but I made the stew on the stovetop because my Instant Pot is too small for that sort of thing.
