Grilled Bacon Wrapped Stuffed Hot Dogs...By Blue Jean Chef

Grilled Bacon Wrapped Stuffed Hot Dogs

All we do in this recipe is take the things we like to put ON our hot dog and put them IN our hot dog instead! These hot dogs really need to be done on a BBQ pan that will stop the bacon grease from flaring up on the grill. Cook them until the bacon is done to your liking and enjoy.

Ingredients:

8 all-beef hot dogs

1/2 - 3/4 cup prepared sauerkraut, drained

2 tablespoons ketchup

2 tablespoons mustard

1/4 cup finely grated Swiss cheese

8 rashers of bacon

16 toothpicks

8 hot dog buns

Directions:

  1. Pre-heat a Technique BBQ Pan on your outdoor grill. It should be hot enough that when you put your hand and inch or two above the pan you want to pull it away in about 2 to 3 seconds.
  2. Make a slit in each hot dog link lengthwise. (If you have trouble stuffing the filling into the slit, you can cut the hot dog in half and fill it like a sandwich. You'll just have to make sure the bacon is fixed onto the hot dog more tightly to keep it all together.)
  3. Combine the sauerkraut, ketchup, mustard and cheese in a small bowl. Fill the slit of each hot dog with the filling. It's ok if the filling forces the hot dog open a little, but try not to overstuff them.
  4. Wrap a piece of bacon around each hot dog, fixing the ends of the bacon to the hot dog with toothpicks.
  5. Turn the heat below the BBQ Pan to medium and grill each hot dog, turning regularly, until the bacon has cooked through.
  6. Open the hot dog buns and toast them lightly on the grill, cut side down. Remove the toothpicks and transfer the hot dog links to the hot dog buns. Enjoy!

Of course, remember, if you don't like sauerkraut or one of the other ingredients, simply substitute something you DO like.
