@Chi-town girl thanks again for posting this!  We had the salad with our grilled salmon last night.  I didn't have any mint, but it was still very good!

@Knit-Chick - I'm glad you like it. Very simple and delicious.

Even better flavor once you are able to use locally grown tomatoes via your garden or farmers market. I like using the larger tomatoes like Early Girls or Big Boys and cutting them into wedges.
