We have two lemon trees, and I am constantly looking
for good lemon recipes.
I wanted to let people know that Martha Stewart's
"Glazed Lemon Cookies" are really good.
It is an easy recipe and now a favoirte with everyone
in my family.
Just google it if you are interested. I hope you
bakers out there try it. I'm baking a batch today.

These cookies were served at a baby shower I attended a few years ago. They were so good I had to get the recipe from one of the soon-to-be grandmas:
1 3/4 cup sugar
2 tbsp lemon zest
1 cup butter
3/4 cup vegetable oil
3/4 cup powdered sugar
1/2 tsp baking soda
1/2 tsp cream of tartar
1/2 tsp salt
1/4 cup lemon juice
2 eggs
5 1/2 cups flour
Whisk 1 1/2 cups sugar and lemon zest in big bowl. Add in butter, oil, and powdered sugar to bowl. Sprinkle baking soda, cream of tartar, and salt on top in bowl. Mix with electric mixer until very creamy. Mix in lemon juice and eggs. Completely mix in flour.
Roll 3-tbsp-sized portions into balls. Place 3" apart on parchment-lined baking sheet. Put 1/2 cup sugar in shallow dish. Spray bottom of a flat-bottomed glass with PAM and dip in sugar, then flatten dough balls to about 1/2" thick. Repeat dipping and flattening of each ball (only spray glass with PAM before dipping in sugar to flatten first ball). Bake in 350 degree oven until just set, 10-12 minutes. Don't let them get golden on edges or bottoms. Let cool on sheet for 5 minutes before completely cooling on a rack.
Frosting:
1 cup softened butter
1 tbsp sour cream
1 tbsp lemon zest
5 cups powdered sugar
1/4 cup lemon juice
Mix butter, sour cream, and lemon zest with electric mixer until smooth and thick. Mix in powdered sugar and lemon juice until creamy. Add extra juice if needed to make spreadable. Frost cooled cookies.

Might want to check into lemon curd. This is my guilty pleasure. Nothing redeeming about it. Some are more tart and some have no zest, your choice

I finally made the glazed lemon cookies today. They were delicious! Thanks so much for posting it.

I'm so glad you tried them! I try to keep cookie dough in the freezer.
Last year when our granddaughters were here (ages 13, 6),
I found a ziplock bag of the cookie dough in balls all ready to
go into the oven!
I had forgotten they were there, and it had been
seven months.
Those cookies were just as good, after seven months. All I did was make the glaze, and there they were.
The girls even felt like they had made cookies.
