I prefer the recipe without sour cream, very similar to Cracker Barrel hash browns. 

 1/2 cup butter, melted
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup finely chopped onion
1 can (10.75 ounce size) cream of chicken soup, undiluted
2 cups shredded Colby cheese
2 pounds thawed, frozen hash brown potatoes

I prefer Hash Brown casserole, but never use sour cream.   I like the creaminess of this casserole to come from butter and cream of chicken soup, with most of the cheese on top along with bacon.

I prefer to call them "Cheesey Potatoes" and also prefer frozen shredded hash browns to chunky.  A MUST with crab legs!
