Saw a video about making fried potatoes.  He did not show whether he used vegetable oil or vegetable shortening.  What does everyone use?  Just curious as to what the consensus is!  Someone also made a comment about adding a little bit of flour to the top of the potatoes when you fry them.  I have never heard that one, have you?  I don't make them very often but I always add sliced onion.  Thanks everyone and Happy Valentine's Day!

I fry potatoes in a non stick skillet with a small amount of bacon grease, but you can use any oil, oil and butter, etc.

You can use any type of oil.

 

What I use for pretty much anything that I shallow-fry is butter and olive oil together.   The butter gives that flavor and then the olive oil brings up the flash point and the flavors go well together.

If this is strictly about frying, sorry.  But, I make mine in the oven. 

 

I cube white and sweet (yes it's a pain) into very small pieces, then put  in a large cookie sheet.  Olive oil or a mix of olive and plain oil, S&P and 375 or 400 degrees.  You can raise or lower temperature if they are getting done before the main course.

 

I do put them on paper towels to remove some of the oil.  But, that is what makes them so good.     

 

Everyone likes them.  I wished they liked them enough to make them!

You can use any oil, but I like to use an oil that has a high frying temp.  My new favorite is avacado oil.  I use about 2 Tab, and then add 2 Tab of butter.  The oil needs to be real hot before adding the potatoes to the pan.  I like to use a cast iron pan to get that crispy outside.  If the potatoes are starchy, I soak them in salt water for about 10 minutes first.  Then dry them thoroughly before adding to the pan.  I like to add onion, garlic and sometimes a green/red pepper, salt and pepper.  I don't put a lid on the pan for very long because then they sweat and won't be as crispy.

This brings back memories of my mom cooking these potatoes in the dutch oven.  They were so good.  Of course my brother and I had to put ketchup on them.

This is how I make delicious fried potatoes!

I use 3 pounds of yukon gold or baby red potatoes, scrubbed, icky parts peeled and dice into bite size chunks. Using a microsafe bowl, MICROWAVE potatoes uncovered for approximately 18 minutes, till cooked.

SAUCE-  1 packet of good seasons dry italiian dressing mix

                1/2 cup of olive oil

                 1/4 cup white vinegar

                 mix well

Heat dressing in large fry pan or I use my electric skillet. Add potatoes and pat down into a singel layer. Cook till browned and crispy, flip and do the same on other side. Total cooking time approximately 15 minutes.   Enjoy!

When I fry the potatoes, I add onions, garlic, peppers.  I also love nickle size slices of hot dogs pieces mixed in.  Fry until all is crispy and you have a pot pot meal...delish.

I only use Canola Oil or Olive Oil.  Which one I use depends on what else I'm making.
