I bought a "hand" of fresh ginger today and was wondering if anyone has simple ways of using it. I know it has to be pealed and chopped but that's it.😁 I read that it's very good for digestion.  I will Google it, too.

I don't always remove the skin but you can scrape it off using a teaspoon. A regular peeler removes too much flesh. Then I freeze it to make it easier to grate. 

 

ETA-

The skin contains nutrients. Leave it alone unless the ginger has too much texture or if it's old and hard/dry. 

 

My favorite is pickled ginger slices (gari in Japan).  I buy it ready-to-eat from a local Asian market.

I keep it in the freezer- when I need it, just grate it off the frozen chunk!

I find grating ginger is better than chopping, easily producing the very flavorful ginger juice.

I store the hand in the freezer and when I need it I grate it until I have the amount I want.

I use fresh ginger alot and I also store mine in the freezer, then use a micro plane grater in my recipes. I make tea with it too --very good for sour tummies. I put some in smoothies and in my sauces and marinades. You can slice it and steep it in water on the stove  --I add a bit in my ice teas. I LOVE pickled ginger too. I make something called golden milk that uses ginger.

I use fresh ginger to marinade chicken wings, I slice the ginger with the skin on after washing it well then toss it prior to cooking.
