Flat bread topping ideas wanted.

Flat bread has been around in various forms in every part of the world, but other than pizza and naan, I've never paid much attention to it-until now! Kelsey Nixon recently did a show on flat breads and over night, I became smitten. I made her flat bread recipe last night (hers is simple spread with goat cheese and herbs, crumbled bacon, diced or sliced fresh roasted beets, arugala to which a combo of lemon juice and olive oil is drizzled over). I roasted a chicken earlier in the day and used that instead-and it was wonderful.

I used a basic pizza dough, rolled it out and then cut it and grilled it on a cast iron grill pan. (As you cook it, you brush each side with olive oil and once you get char marks, flip it and cook the other side). I've made flat bread on my Cuisinart Gridler-and no doubt, you could probably use any of the indoor grills that are out there. I've also done it on a barbeque-but in the heat of summer, unless you are using a fabulous briquet or wood chips, in summer's heat it's not worth it!

At any rate, does anybody have ideas for toppings? I was thinking cream cheese with smoked salmon and capers would be tasty...carmelized onions and thin slices of beef or chicken....you could go crazy with sea food. This is such an easy, quick "go to" dinner: if you were in a hurry, you could certainly buy flat bread or naan and heat it up and top it. Any ideas for toppings?

The possibilities are endless, it's all according to your tastes. I would go Italian or Greek first. You can do a lot with pesto as a base. Love anything with spinach and feta!! Summer is coming, so anything to do with many types of salad would be great, as well as many veggies!!
