OH! Super simple.  Most quiche have a crust.  This one is held together by the cheese and spinach.

 

In most cases, eggs, cheese, and vegetables are poured into a pie shell and baked.


This does sound easy. This is unusual for quiche not to have a crust nor cream/milk/halfnhalf. This is what i would call a  baked omlette or egg n spinach bake

@ECBG YUM, I can smell that from here!   I fix a breakfast casserole with bread on bottom, cooked crumbled sausage, layer of eggs with milk and dry mustard follwed by 2 cups of cheese. 

I will add this to my bucket list,  thanks.

This year DD and I are staying home for Easter--but we are having lox and bagels, fresh fruit and sparkling cider in orange juice for breakfast, then just nibbling until I fix stuffed flank steak and scallops vera cruz for dinner!! No brunch here either but that sounds good too.

@coffee drinker , I would do the spinach quiche.  Also, two hours before, have on your table an Easter Charcuterie Board. This should consist of  (on a board)

 

Ritz Crackers

Rondele Spread

1/2 lb shredded ham (low sodium)

Fontina Cheese. Also for ritz

mozzarella Cheese. Also for Ritz

Corner of Green grapes. Seedless

Some Easter Peeps

Chocolate Eggs

Jelly Beans.

 

I am doing this but I am having sit down dinner. Pork Roast, mashed potatoes, gravy and vegetable.  Dessert and coffee.

 

My family and myself love charcuterie boards.  Have made many different kinds
