Easter Brunch Ideas -- Any Suggestions

Looking for some ideas for Easter brunch that can be prepared the night before and baked the day of.  Any thoughts?

How many are you serving?

 

Ham and cheese paninis cut small would be easy. Put them together the night before and just put on a panini press or george forman grill the day of.

Oh - just remembered something someone made that seemed easy, was tasty, made the night before and baked in the morning. It was a breakfast bake with cubed bread pieces and apple pie filling. I'm sure google has some recipes to choose from if you search those key words.

Sliced Ham, Vegetable Lasagna, cheeses and breads, mustards, fruit salad or sliced on tray or in bowl.

We don't do "brunch'.  It's easier to make potato salad and deviled eggs, and dessert the day before; day of, put on the green beans while the ham bakes, steam carrots, bake spinach quiche, and rolls while the ham rests.

@coffee drinker  I love Paula Deen's Pineapple Casserole, because it contains lots of cheddar cheese. It can be baked the day before and reheated for the brunch. 

Pineapple Casserole

By Paula Deen

Ingredients

  • 1 cup sugar (I would use a little less sugar)
  • 6 tablespoons all purpose flour
  • 2 cups grated sharp cheddar cheese
  • 2 (20 oz) cans drained, and 6 tablespoons pineapple juice reserved pineapple chunks
  • 1 cup made into crumbs buttery crackers
  • 8 tablespoons melted, plus extra for greasing pan butter

Directions

Preheat the oven to 350 °F.

Grease a medium-size casserole dish with butter.

In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

I love breakfast casseroles and fruit salads for a brunch.

I will post a recipe later for a make ahead dish.  I have been making it for years and should know it by heart but can't trust my memory..ha!   It is made with hash brown potatoes, cubed ham, eggs, cheese, etc.  Very easy and good. You can also fix bacon ahead and reheat.  I do that with sausage too and add apples to it.  Also, you can make a fruit bowl ahead of time but do not add bananas until day of brunch.

This is a really, really good recipe.  Through the years, every time our grandsons now 18 and 11 come over, it's what they want!  Slices reheat easily in the microwave.

I've posted it before and the ladies like it.  No crust BTW, fewer calories!!!!

 

 

Spinach Quiche (Crustless)

 Preheat oven to 350 degrees

 

1 Tbls. Oil

1 lg. onion, chopped

1 10 oz pkg chopped, frozen spinach, thawed, all water squeezed out

        I put in a colander and press with a spoon.

5 eggs

Âľ lbs Muenster (or Haverti) cheese, grated

Salt, pepper

 

 Preheat oven to 350 degrees

Spray pie plate

Heat oil in skillet over med heat

Add onion cook only until clear

Add spinach, cook only until excess moisture is out

Let cool.

Beat eggs in bowl with fork or whisk.

Add cheese,  and salt, pepper to taste

Stir onion, spinach mixture in.

 

Pour into pie plate

Bake 40-45 minutes until lightly brown.
