EASY MATZO KUGEL FOR PASSOVER

MATZO KUGEL 

 

 (as a side dish)

 

In a lg. bowl, beat together 4 eggs w/ 1/3 cup milk (or water if Kosher). Break up 3 sheets of matzo & let soak in mixture until almost soft. Add cinnamon to taste.

 

Add 2 lg. apples cored, peeled and cut into chunks. Add raisins and nuts (optional)

 

Put in 13X9 baking dish.

 

Bake at 350 and check after 40 min. or until top is browned and eggs are set/apples soft. 

 

 

*****To make as a desert, add sugar to egg/matzo mixture, top w/ cinnamon/sugar.  Top w/ crumbled macaroons 5 min. before removing from oven. Macaroons should be browned...watch carefully since they can burn quickly.

@Shanus that sounds good and healthy too.What are matzo sheets?Do they keep well?I will try to make this as a breakfast with raisins and nuts added.Could you add more apple?

@dex  Matzo sheets is what I call matzo right out of the box...big squares, that’s all. Lol. All my recipes are not exact...add whatever or how much you like. If it sounds good for breakfast, make it the night before...unbaked. Cook in the morning....or can be baked ahead and reheated in oven covered in foil...microwave dries it out. 

You can even add granola if you like, but then increase eggs and milk accordingly so not dry.

@ShanusThanks i think it will be even more convenient to prepare ahead!Looking forward to trying it when I find that matzo square.

Have u ever made a lasagna with mazta 

its good 

 

one piece of matza just fits in a 9 x 9 Pyrex

@dexI call them Matzo or Matzee crackers, you will find them in a box in the international foods section of your super market.

@bonnielu I put my left over matzo in my vitamix and make it into either crumbs to replace bread crumbs or I crush them up fine to use as matzo meal to make bagels for Passover. I also make Caramel Matzo Crunch.

@Shanus I make the same recipe and I add either lemon or orange rind to the recipe.

@bonnielu I also meant to mention, you can use your leftover matzo's to make pizza. If you would like the recipe, let me know. It's so easy and really good! I make them most of the time with no cheese!
