@Shanus Here's the Passover Pizza Recipe :

 

Preheat oven to 350 and spray a baking sheet. I use to cover the sheet with foil but not anymore. Take one piece of matzo and wet it, just a little bit. Sometimes I I don't bother because it's crispier without wetting it. My husband prefers the matzo that way. Either put balsamic vinegar or pesto on the matzo. Then put sliced tomatoes, then avocado slices and then a little italian dressing overall. Instead of Italian dressing, I put a little more balsamic on top. Be careful, the matzo can break. I put the matzo on the baking sheet before the toppings. Bake for 7-10 minutes or longer if desired.  Depending on how well done you like it.

 

Pear Pizza: Preheat oven to 400. Spray a baking sheet. Slice a pear really thin and place on matzo. Then put roasted tomatoes, then goat cheese. Bake it for 6 minutes or so. Then drizzle a little bit of olive oil, salt and pepper and then I put arugula atop.

@Shanus Goodmorning. I was going through my recipes and came accross a Creamy Matzo Kugel. I never made it but I keep meaning to. It has sour cream and cream cheese. Would you like the recipe? It's not the healthiest but it looks good and it got rave reviews. It's from the Second Avenue Deli Cookbook, Have a good day.

@Shanus.                         Creamy Matzo Apple Kugel

2 tbsp plus 2 tsp unsalted butter, 4 Mac apples, peeled, cored, cut into 3/4 inch slices, 1/4 inch thick, 1/2 cup raisins, 1/2 cup sliced blanched almonds, 10 plain unsalted matzos, 4 eggs beaten, 2 cups sour cream, 1/2 cup whipped cream cheese, 3/4 cup sugar, 1 tsp cinnamon, 1/2 tsp salt, softened butter for greasing pan, confectioners' sugar.

Preheat oven to 350. Melt 2 tbsp of the butter in large skillet and sauté apple slices on high heat, stirring occasionally, until soft and lightly browned. Remove to a large bowl with a slotted spoon. Add 2 tsp butter to the skillet, lower heat to medium and quickly sauté raisins and almonds, stirring constantly. Be careful. it to burn them. Add to the bowl with apples and set aside.

Place matzos in another large bowl and run cool water over them to soften. Crumble the matzo and drain in colander. Return drained matzo to bowl. Combine eggs with matzo and stir well. In another bowl, mix sour cream and cream cheese thoroughly. Then add it to the matzo mixture, along with sugar, cinnamon, salt and fruit nut mixture. Mix all ingredients thoroughly.  Grease 10 inch square baking pan with quite a bit of butter, pour mixture into pan and bake 50 minutes or till top is a light golden brown. Let it cool on counter. Loosen kugel, place large platter over and turn the kugel onto the platter. When cooled, sprinkle confectioners sugar on top.  The recipe says to serve it warm, not hot or  serve at room temp but they say it's best served chilled in the frig with the confectioners sugar added just prior to serving.  Again, the recipe is Courtesy of The Second Avenue Deli Cookbook by Sharon Lebewohl and Rena. 

If you make this, please let me know. My husband can't have any cheese but if it's really good, I'll make it and I guess I'll have to eat it all myself or give some to my kids.

@Shanus. I'd be lucky if I could eat 1/4 of it but if I must, I must! Maybe Ill make it next week. I'll probably make my matzo lasagna in a day or two. How much matzo we consume, is amazing and that's aside from the Passover bagels I make. If you would like any other Passover recipes, let me know. If I have something that you might like, I'd be happy to share with you. All of my recipes are oldies but they have all held up through the test of time and are still goodies. I'm now passing them on to my kids. My grandson brought over 2 boxes of Barton's thick chocolate shaped matzos' as usual. Not only is my grandson jumping around but my husband is a little jumpy also, sugar rush! . That's aside from the desserts I made. Stay well and take care.
