I've always made Easter dinner except for the time we went to the Cliff House for Easter brunch.
I'm going with brunch this year since I am relegated to soft foods for awhile.
I would love to know what other people make for Easter brunch, soft food or not, LOL.
I'm thinking of an egg bake with cheese and hashbrowns, fruit, pastries and maybe a traditional Finnish cake. I just found out my ancestry includes Finnish so I looked into it and those people love their cakes, cookies and pastries!
Oh, maybe Mimosas although I don't know exactly what they are ![]()

My recipe for Mimosas:
12-oz can apricot (or apricot-mango if available) nectar
12-oz can pineapple juice
3/4 cup water
6-oz can frozen orange juice concentrate, thawed
750-milliliter bottle chilled champagne
Combine nectar, juice, water, and concentrate in pitcher. Add champagne just before serving.

Let me tell you what Mimosas are.....delicious! They are champagne/wine and orange juice combined. Fresh orange juice is best, but Simply brand is a close second to fresh. Use a dry sparkling wine, not sweet. Make sure the wine and orange juice are cold. Add the wine first, then the orange juice and do not stir. Combine equal amounts of each. It is an absolutely perfect drink for a brunch. Enjoy!

Mimosas are equal parts oj & champagne. You can substitute gingerale for little ones or those who don't drink. Sugar free gingerale & Trop 50 if you want low sugar.

If you like Ina Garten recipes, she has a French toast casserole that always seemed appealing (and would be soft to eat). She uses challah bread, but I imagine many other breads could be used.
It all sounds inviting, @Noel7 Whatever you serve your family and guests will be wanting more!

I like brunch. We always have a ham on Easter with bakery rolls. It's a staple.

I'm so glad you mentioned that, about the gingerale @Snowpuppy My daughter doesn't like a lot of alcohols but she may like that!
