Dulce De Leche in the Pressure Cooker

I posted this as part of a hot chocolate recipe, but thought it might be something others would be interested in by itself.  It comes out perfect everytime and is the quickest way to make your own DULCE DE LECHE.

 

Dulce De Leche in the Cook's Essentials 6 qt. Pressure Cooker:

(This stuff is addictive, you have been warned!)

 

Ingredients:

- 1 or 2 cans Sweetened Condensed Milk (Pop Top or Regular lid version - LABELS REMOVED)

 

Directions:

- Place steamer rack in bottom of Pressure Cooker

- Place can(s) of Sweetened Condensed Milk on rack, laying on their sides and not touching

- Fill with water until cans are covered by approx. 1 inch of water

- Pressure Cook on HIGH for 40 minutes

- For lighter Dulce manually release the steam after the initial 40 minutes cooking time and remove cover and let come to room temperature before handling cans.

- For darker more intense Dulce let cooker sit for 45 minutes after initial 40 minute cookling time, then release any remaining steam, uncover and let come to room temperature before handling cans.

(NOTE:   Cans should should be in good condition, not dented and labels removed.  DO NOT handle cans until they and the water have come to room temperature!

This will keep forever unopened and unrefridgerated or 3 months in a sealed container in the coldest part of your fridge once opened.)

I think they have this stuff already made in the Mexican food section at Walmart.  What do you do with it?  I'm a long-time pressure cooker user but kind of felt cooking a sealed can was courting disaster.  I may decide to try it just to be adventurous if I can figure out what to do with it.

I made 2 cans of dulce de leche in my PC last night.  I put it on just as I was going to bed so after its cooking 40 minutes it sat in the PC all night.  I opened a can at dinner this evening.  Much to my surprise it was a solid of the consistency of jellied cranberry sauce and was still warm.  I nuked in the micro for a couple minutes but it didn't thin out much.  Will try to thin it with a little milk.  We had it over some ice cream and the flavor was wonderful, similar to a Kraft caramel but more intense.  It would be wonderful on an apple pie.

I buy mine in the latin section of the supermarket (no pressure cooker) and make a killer frosting with it. DH can just eat it by the spoonful if I let him:

 

3 sticks butter (softened)

1 can dulce de leche

1 box confectioners sugar

1 tsp. vanilla

 

Beat until smooth. I usually use this with chocolate cake, but it's also good with an apple or spice cake. With chocolate cake, I put some coarse salt on it for a salted caramel effect.

@dfyre  Your frosting sounds delicious -- thanks for sharing.  I'd love it on spice cake, but I can almost taste it on Brownies, too.

 

I think that the last time I bought Eagle Brand Sweetened Condensed Milk, there was Dulce de Leche by Eagle Brand on the same shelf.  In fact, when my cans of Eagle Brand "age" a little too long on the pantry shelf, they make it all by themselves!
