Ina has a wonderful recipe for duck. You want to purchase a smaller duck, under three lbs. Smaller birds are less fatty.

Mark, thanks- when I have researched duck, only two sources came up- now I have more options!!! By the way, I buy boneless skinless duck breast meat from Maple Leaf Farms and I have made a fabulous version of Julia Child's Bouf Bourginon. DH can't eat red meat, and duck is simply a marvelous replacement. I think people get intimidated by the fat issue, but it need not be complicated or difficult. If you score the skin, being careful not to cut the meat, and pour off the fat that renders out about every 45 minutes( I use a turkey baster for ease) it is easy. Forest, I adore Peking duck too, and I recently discovered a way to get that marvelous crispy skin without using a bicycle pump.... you brush the duck with equal parts of butter and oil and broil it!!!! I recently had it at a restaurant nd the duck they served was picture perfect brown, and the skin was marvelously crisp. I thought they deep fried it!!! Thankfully, they shared their little secret with me, and three days later, I got the Maple Leaf Farms newsletter describing the process. Clearly this is a sign from the heavens that this is the way I am to prepare our duck! Poodlepet

Your post reminded me - a few years ago I was in the International District in Seattle and purchased a cooked duck. They cut it up for me and when I opened the package at home the head and feet were in the package!

Oh, dear! Those are funny stories. I've seen whole roasted ducks hanging in Chinatown but was never brave enough to buy one.

Thanks, everyone, for the tips! I am planning to go duck "hunting" (in the grocery store) this week. I know one of our local stores carries it but not sure of the brand. If they are out, I'll check out Costco. Wish me luck! {#emotions_dlg.thumbup}

I was just at Costco. Maple Leaf frozen ducks are 2.99 per pound. I don't know what the usual price at grocery store is so I cannot compare. I bought one to stuff in freezer. I may fix it for New Years.
