@Zhills, yes I just made risotto for the first time. It was mushroom risotto. Turned out very good, although I thought it could have been a little creamier. I like the idea that someone posted about adding a little cream of mushroom soup or whatever.

I've been making mushroom risotto in the Instant Pot using the hip pressure cooking method. It tastes delicious and no babysitting! Pairs well with braised short ribs. Mmmmm... 😋

I have made it a few times both on the stove top, with the constant stirring and in my pressure cooker. Much prefer the P/C . It tastes the same and I use Calrose rice instead of the expensive aborio rice.

Fixed the risottto from Schwans last night and really enjoyed the subtle garlic flavor.  Served it with butter poached lobster.  Great contrast.  Now I understand the different variations you have mentioned here.  Thanks for all of your suggestions.  A new side to work with.  That's exciting!
