I made this for my lunch today and had some watermelon on the side. Very good and will be making this again. Taking a couple over to my daughter and have the last one for lunch tomorrow.
I used the smaller tortilla shells and wanted to use the ones I had on hand. I did pick up some fresh dill. I put in mine avocado, cucumbers, tomato and green and orange peppers. Had those left from a pasta salad I had made.
For me a little less dill and garlic powder and perhaps try fresh garlic next time. But definitely on my list of things to make often. The beauty is add what you want. Fresh mushrooms would be good.
I think these would be fun for girls night at the house and have the ingredients cut up and available and let them choose what they would like in it. Make your own type of thing.
I make pizzas with the tortilla shells. I add sauce, mushrooms and tomatoes and top with cheese and bake. Very good and lower calories as well. Sometimes I want something like that instead of a regular pizza. Easy to do for one as well.

I made 1 today. I added diced celery,green pepper, and carrots. Seasoned with garlic and onion powder, salt/ pepper. I had a hard time trying to roll it, so i just tucked the ends under and had it on a plate...couldn't pick it up, so I cut it. Very refreshing and filling too.
I didn't know if I'd like it, mixing cottage cheese, I usually don't eat...but I enjoyed it and no doubt felt like a healthy meal.

I made cucumber salad for the first time and it was pretty good. Been watching a ton of tik tok videos for the food hack recipes and can't wait to try some.
Next will be the lemonade frozen drink with condensed milk etc, looks yummy,
Also the pie fillings put into puff pastry dough. First the blueberry, I have to make the syrup for them first and then the apple or cherry pie filling. You can also make them and put into biscuits. A little fattening but I don't eat much.
