EASIEST Summer Dessert You'll EVER MAKE!

Can't get much easier than this! 

 

 

 

QUICK AND EASY SUMMER MINI FRUIT TARTS

 

1 Package of 15 Mini Phyllo shell/cups (can be found in grocery stores in frozen food section. Athens is one brand and Wegmans has their own brand, which is good too)

 

Your choice of canned fruit pie filling or lemon curd

 

Whipped cream or Cool Whip. 

 

Fill the mini shell with your favorite pie filling/s or lemon curd is also delicious.  Then top with a dollop of whipped cream and a little sprinkle of cinnamon on top.  

 

*Note:  To avoid the shells from becoming too soft,  don't prefill the shells in advance.

Thanks for posting this. It's a game changer for me! Somehow I never realized that the shells were already baked and ready to fill. Lemon curd here I come! Woman LOL

What a great idea! I've seen the phyllo shells and Wegmans carries their own brand, too. 

 

I'm a huge fan of lemon curd, and I've also had raspberry curd, which would be another nice option. The other day, I was at Home Goods, and almost purchased a Tiramisu filling or spread in a jar. Looked delicious. I may have to go back for it, because that would work, too. I also love prepared chocolate pudding--Kozy Shack or Wegmans brand--that'd be good, too.

 

That's the nice thing about these shells: they're very versatile, and I think their small size allows for a lot of options for rich fillings, too.

@ciao_bella - These look so yummy, and you can never go wrong with lemon curd!

 

I've used these shells more than once. I have made mini Quiche Lorraines with them, and something else I can't remember the name of!   Smiley Happy

@Moonlady  Yes!  I should have mentioned that Wegmans also carry their own brand of these shells.  I've tried them and they're good!  I'll edit my original post to include Wegmans.

I have filled them with taco meat and topped them with cheese for an appetizer.
