Cucumber Cottage Cheese Wraps

Cucumber Cottage Cheese Wraps
Ingredients (makes 4 wraps):
4 large flour tortillas or spinach wraps
1 cup cottage cheese (small curd preferred)
1 medium cucumber, thinly sliced or julienned
1/4 cup finely chopped red bell pepper (optional, for crunch)
1/4 cup chopped fresh dill or parsley
Salt and pepper to taste
1 tablespoon lemon juice or white wine vinegar
1/2 teaspoon garlic powder or a small minced garlic clove (optional)
Optional add-ins: baby spinach, shredded carrots, sliced avocado
Instructions:
Prepare the filling:
In a medium bowl, mix the cottage cheese with lemon juice, garlic powder (if using), chopped herbs, salt, and pepper. Stir until well combined.
Assemble the wraps:
Lay out each tortilla. Spread 1/4 of the cottage cheese mixture in the center of each wrap.
Add vegetables:
Top with sliced cucumber, red bell pepper, and any optional veggies like spinach or avocado.
Wrap it up:
Fold in the sides and roll tightly like a burrito.
Serve:
Slice in half diagonally if desired. Serve immediately or wrap in parchment/plastic wrap for later.
Tip: For extra crunch, try adding some sunflower seeds or sliced almonds inside before wrapping.

Mmmmmmm super yummy ingredients!! . I am going to add Everything Bagel seasoning to the mixture.

I work this morning but going to make after and I have all the ingredients on hand.  I was wondering how to use up the tortilla wraps and this will be perfect.  The best part is you can add any veggies inside you want.

 

I have been on a eat better routine and this fits right in.  I don't like to say diet because it is more stop eating ****** when walk in the door or get bored.  If I eat better I am more satisfied too.   I am off for a week so this will be a good go to for lunch.  I think my daughter would enjoy this also so make up some extras.

 

Thanks for the idea and love when I find something like this.  I like simple meals and recipes.

The filling combination sounds terrific. I usually have most of the ingredients on hand.  I'd skip the tortilla and eat it from the bowl.
