I love pumpkin, and banana bread, now I need to find an outstanding cranberry bread. I just will not give up making and baking the breads. They smell so lovely!

Hello, @qualitygal!

I'm from New England, and I, as well as everyone I know, uses the Ocean Spray Cranberry Bread recipe that's found on the back of their bags of cranberries.

Maybe there are better recipes out there, but I wouldn't know! Smiley LOL

Classic Cranberry Nut Bread

Classic Cranberry Nut Bread

 

Ingredients

2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon grated orange peel
2 tablespoons shortening
1 egg, well beaten
1 1/2 cups Ocean Spray® Fresh or Frozen Cranberries, coarsely chopped
1/2 cup chopped nuts

  Directions

Preheat oven to 350ºF. Grease a 9 x 5-inch loaf pan.

Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan.

Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight. Makes 1 loaf (16 slices).

The recipe that Sabatini posted is very similar to one I have been making for several years.  It is very good.  The only difference is my recipe uses 2 Tablespoons melted butter, does not call for orange peel and uses 1/2 cup orange juice plus 2 Tablespoons hot water.  I use 1 cup whole cranberries, fresh, unchopped.  My recipe says bake at 325 for 1 hour and 10 mins. or until done.

 

This is a very nice bread to serve at holidays.

I live in carver ma . where the cranberries grow , There is a drought here and cranberries did nt get as much water down here so the price of cranberries may be hogher this year , Ithink there was a lower yield of cranberries ,

By the way ...does anyone have the recipe   for cranberry bread that is made with cranberry sauce and brown sugar etc.
