We make it every year. I'm not a big meat eater but I love this and it's very easy to make.

@Harpa, if you just want a small quantity cheat! It will be more expensive but go to your local deli counter and ask for the weight of corned beef you want but tell them you want it in a chunk not sliced. I would suggest one pound minimum.
ETA: If you decide on buying a brisket and cooking it yourself corned beef freezes really well. Just portion as you would like and put the rest in the freezer for another time. Do, however, keep shrinkage in mind, it can be considerable.

I cook mine in a slow cooker covering it with a combo of water and a bottle (or two) of beer. It's my son's favorite meal. Skipping the cabbage this year because it never was eaten.

I know you asked for Crock pot instructions...but may I tempted you with the BEST EVER way to cook Corned Beef?
@Mothertrucker posted it back in 2018....and it is the best and SO easy. I cook the veggies separate but you could always add them to this oven method.
One year, we had a cook off. One smoked, one boiled on the stove, one Crock Pot and this OVEN recipe won unanimously HANDS DOWN. Everyone wants the instructions after they have tasted it. I thank @Mothertrucker every year.
Using heavy duty foil, no clean up..... just bake it and forget it! I do make her apricot glaze it is worth it!
CORNED BEEF ROASTED IN OVEN W/ APRICOT JAM GLAZE
the best way, hands down, to cook corned beef...
Drain it, throw out the packet..
Wrap the meat in heavy duty foil, place on baking sheet .place in 275 degree oven..
bake 1 1/2 to 1 3/4 hr per pound..
if you like, when it is done,
glaze with a mix of apricot jam, horseradish and mustard
and broil for a few minutes..
it will be the most tender and least shrunken corned beef EVER..
We have done this for 40 years, and swear by it...

I love Corned Beef dinners and will be looking for my beef at store this week before good ones are picked over. I have always looked for a "flat" piece of corned beef....has always been good instead of thicker pieces....sometimes hard to find the flatter ones. Lots of good tips here from others. It is easy to fix whether in crock pot or stove top...just follow package instructions. I have never cooked it in oven. I like cabbage but several don't so I often skip it. When done, let sit and remember to slice across the grain.
Usually what I do is place sliced or quartered onion in bottom of crock pot...add corned beef with spices then sprinkle a little brown sugar over it along with 2 teaspoons of minced garlic, 2 bay leaves and....enough water to cover OR...1 can beef broth with enough water to cover OR 1 bottle of beer and the water. Cook on low 8-10 hours. After 4 hours of cooking, add quartered red potatoes and carrots (as many as you think you need). If using cabbage, add quartered slices 2 hours before cooking time is done.
To those who don't need a big corned beef dinner....I would go straight to my store deli! They usually have dinners to go that look good to me!

THANK YOU for posting that way of oven roasting! I now remember that thread and have always wanted to try this oven method, but was afraid I would mess up my meal!🤣🤣🤣🤣🙃🙃🙃🙃☘️☘️☘️☘️
I may get two smaller corned beefs and try that oven method with one of them!

OMGosh--I LOVE corned beef and cabbage---I throw mine in the crock pot, then put in spuds, carrots and cabbage the last few hours---was going to buy the beef yesterday but dear gawd---was almost $20 for the smallest piece of meat----that will not do at all, so will buy deli corned beef for panini sammies instead.
