Banana Cake with Cream Cheese Frosting

Ingredients

 

  • 2/3 cup shortening
  • 1-1/2 cups sugar
  • 2 large eggs, separated, room temperature
  • 2 cups mashed bananas (about 4 medium)
  • 1 cup whole milk
  • 3 cups all-purpose flour
  • 1-1/4 teaspoons baking powder
  • 1-1/4 teaspoons baking soda
  • 1/2 teaspoon salt

CREAM CHEESE FROSTING:

  • 1 package (8 ounces) cream cheese, softened
  • 1/4 cup butter, softened
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • Dash salt
  • Sliced banana, optional

Directions

  1. Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. Add bananas and milk; mix just until combined. Combine flour, baking powder, baking soda and salt. Add to creamed mixture just until blended.
  2. In another bowl, beat egg whites until soft peaks form. Fold into batter. Pour into a greased 13x9 baking pan. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool completely on a wire rack.
  3. In a large bowl, beat cream cheese and butter until fluffy. Add the confectioners’ sugar, vanilla and salt; beat until smooth. Spread over cake. Store in the refrigerator. If desired, serve with sliced bananas.

OMG @Chi-town girl  if you knew what all I've eaten today you wouldn't have teased with this scrumptious looking offer. It's been a chilly, stormy day and I got the notion to bake bread and it's yummy.
Can't believe with all the great cooks in my fam that I've not had this one. I already know it will loved by all and thank you for sharing.

@Spacrazy - lol 😂  I make banana bread regularly, will make this cake next time as an alternative.

My brothers and I couldn't get enough of my Mom's banana cake: 

 

3/4 cup butter

2 cups + 2 tbsp sugar

3 eggs

2 tsp vanilla

3 cups flour

1 1/2 tsp baking soda

1/2 tsp salt

1 1/2 cups buttermilk

2 tsp lemon juice

1 1/2 cups mashed banana

 

Mix banana with lemon juice.  In another bowl, whisk flour, baking soda, and salt. 

 

In big bowl, beat butter and sugar until fluffy.  Beat in eggs one at a time.  Stir in vanilla.  Beat in flour and buttermilk a little at a time.  Stir in banana mixture.

 

Bake in greased and floured 9X13" pan at 275 degrees for 1 hour.  Cool in freezer for 1 hour.

My mother made an insanely delicious 3 layer banana cake with the European butter cream frosting. It was a rareity but it was very much worth the wait with a lot of pleading. 

 

WOW - she nailed it every time making any cake she baked.
