I made this side dish and it was delicious, but I made a few changes that I will list at the end of the recipe.

 

4 ears fresh corn, cooked and cut off the cob

4 avacados, diced

juice of 1 lemon

2 pints of tomatoes, sliced

2 red bell peppers, diced

1 cup red onion

1/4 c  jalapeno, diced

l lime zested

1/4 c olive oil

1 tea black pepper

1 tea garlic

1/2 tea cayenne

Combine all and put in the fridge until cold.

 

Changes:

Instead of fresh corn and lime, I found 2 packages of frozen corn that has lime juice in it and just let it thaw. 

I didn't use that many tomatoes, but I used cherry tomatoes, sliced in half.

I used only about 1/4 of the onion.

Left out the jalapenos because my belly doesn't like that stuff.

I added one can of pinto beans, but you could use black beans.

Other things you could add but I didn't:  fresh basil leaves, 1 tea dijon mustard, 1 Tab champagne vinegar.

I do one like this but don't add the bell pepper.  I use black beans (the seasoned ones are better) and sometimes I roast the corn under the Breville broiler.  

 

One of my favorite summer dishes.

Shoot, I don't remember the brand.  It was a major brand name that I found in the frozen section at Walmart.
