I have been making this for so long and people LOVE it....make sure you add the corn chips just before serving...I always use the nicer dicier on my vegetables ..I don't like big chunks... This was in one of Paula Deen's first magazines.. never in her books...it was a viewer sent in one....people go crazy over this dish...Enjoy..

Ingredients

  • 2 (15 ounce) cans whole kernel corn, drained
  • 1 8 ounce bag pre shredded, finely grated cheddar cheese or Mexican cheese..
  • 1 cup mayonnaise
  • 1 cup green pepper, finely diced
  • 1/2 cup red onion, finely diced
  • 1 (10 1/2 ounce) bag coarsely crushed Frito's chili cheese corn chips

Directions
  1. 1 Mix first 5 ingredients and chill. Stir in corn chips just before serving
  2. The original recipe calls for 2 cups of regular grated cheddar cheese, but I found that its better with the pre shredded cheese...I take this to potluck all the time and ...its the first to go..... also get the good yellow corn in the can not the santiam brand...its a brownesy yellow,..very yuk make sure your corn is like the niblets brand bright yellow........Enjoy and keep cool...
