I don't know why it's called "Louisiana". I got this years ago from somewhere??

LOUISIANA POTATO SALAD

2 lbs red potatoes, cubed and cooked

1 cup Italian dressing (zesty or robusto style)

1/2 tsp Paprika

1/2 tsp ground red pepper (Cayenne)

8 slices bacon (thick style, cut into 1" pieces)

1 medium onion, chopped

2 celery stalks, sliced

Mix cooked potatoes, dressing, and seasonings.

Cook bacon in skillet, remove bacon, drain on paper towels.

Cook onion and celery in the remaining grease, until crisp tender.

Add bacon and onion and celery to the potato mixture.

Mix all together until coated.

Note: because of the bacon grease used in the recipe, this has a bacon-y taste. It's a different flavor for a potato salad, but in a good way.
