I know you asked for tried and true, but there is a one dish site that never fails me.

I have made a ton of her recipes, and they are all fantastic.

Re: Cooking for 1 or 2

[ Edited ]

I'm trying something new this week...wish me luck!

Gonna take a pouch of Beef & veggie Medly and add it to a can of chicken broth!  I've tasted the Pouch an it's not bad!

Meat & veggies!  Add some crackers!!!

Would be a great "late" dinner!

I no longer have the "umph" to lift a pot full of soup!

I make small batches so I'lI eat it without having to freeze it!

I love my pressure cooker but it is too heavy for me to use.

I think I'm getting old!

This sounds delicious. Do you use skinless chicken, boneless?

@Puppy Galore ....yes, the recipe calls for Skinless, Boneless Chicken Thighs but you could substitute breasts too.  Here is another easy recipe that does use chicken breasts and is adjustable for number of portions.

Chicken Pronto

Boneless, Skinless Chicken Breasts (as many as you want)

Italian Salad Dressing..1/2 cup or more depending on number of chicken breasts

Bread Crumbs .... 1 cup or more

Dip chicken in Italian Salad Dressing and then into Bread Crumbs.  Place in baking dish and cover.  Bake at 350 for 30 minutes; uncover and bake another 30 minutes.

(To cook in less time, adjust temperature up and less time.)

Thank you, I guess I didn't read far enough down to see you used boneless.

Thank you for another recipe, I have all the ingredients for it. I have unflavored bread crumbs and the dressing!

I'll bake it for my Sunday dinner. It's just me so I don't like to make more than two servings.
Thank you so much.
