I know there are lots of recipes online, but I would like to know your favorite, QUICK & EASY, meal for 1 or 2!

 

Created ones are best!  Mine is Potsticker Soup!

I usually make a batch of something and then divide it up into locknlock or freeze it if it's a soup.

 

My go tos right now are avocado puddings and spinach gnocchi soup.

 

I also like breakfast for dinner so you very well may find me with eggs and toast some nights.

If I'm going to go through all the trouble of cooking I'm not going to make just one meal. I make enough for 2 or more days. Or in the case of chili or stews I will freeze some for later.

Potsticker Soup for Me

 

I take a can of good chicken broth or just 1 cup for 1.  Put in a small pot.

 

Add your favorite "dipping sauce" to the broth to taste!  Yum!  Go easy at first!

 

I prepare 4 potstickers in a small fry pan.

 

I cut a potsticker into bite size pieces.   Some of the filling will fall into the soup. giving it the best flavor!

 

Heat and enoy!  Couldn't be easier!

Grass fed burger on the grill. We always have patties in the freezer.

 

I always have 1 lb packages of shredded chicken in the freezer I can thaw to make soup, chicken salad, bbq chicken sandwich etc. 

 

We also both like pan-fried pork chops with rice. 

DH uses a little Adolph's tenderizer, rub chops with olive, sprinkle with salt, pepper & thyme.

Cook 1" boneless pork chops in stainless steel pan 3-4 mins per side on med heat. Turn off heat put the lid on pan. Let it sit 10 mins. 

Deglaze the pan with some butter & broth or use wine. We put this on the chops & rice.

DH makes this quite a bit. I don't eat it. It has greasy Johnsonville Brats in it. I can't eat greasy food.

 

Sausage & Beans

 

1 lb smoked sausage, sliced

1 med onion, chopped

2 cans Cannalleni White Kidney Beans

1 1/2 c water

1 can 14.5 oz Rotel diced tomatoes with mild green chilies, undrained

1 T ranch salad dressing mix

 

In Dutch oven, brown sausage remove from pan, brown onions until tender, add browned sausage, beans, water, tomatoes & ranch mix. Bring to boil. Reduce to simmer for 5 mins. Serve over rice or not. He eats it both ways.

The recipe calls for olive oil to brown sausage & onions but after browning the sausage DH says it doesn't need it.

 

DH just made a batch the other day. He freezes what he doesn't eat.

I cut up fresh zucchini, onions, broccoli.  Slice some kielbasa and saute everything in some butter/olive oil, salt and pepper.

 

Any veggie works and is delicious served over rice or just by itself.

On a day where I have had a " heavy " meal, I'm not hungry for dinner ( we eat rather late ).

 

As I wrote in a lengthy post last year, I make a huge batch of marinara sauce twice a year and freeze in Ziploc bags and 5oz. Paper cups.  When I want something light at night, I have "dunkers."  DH heats a very small bowl of the sauce and slices sticks of soft Italian or Portuguese bread.  Served with chilled white wine...Mmm m.

 

If I need a little protein, he'll quarter one Wegman meatball thawed and heated in the sauce.

My kielbasi stew -pound of turkey kielbasi, jar of sauerkraut, bag of fresh (cleaned) or frozen green beans, optional small potatoes not peeled.  Put everything in a deep frying pan bring to a boi then simmer for about an hour.  This lasts me a few days.
