I still make a 9 x 13 casserole dish of something or a full stock pot of soups, spaghetti sauce, etc. I then cut the casseroles into individual servings and freeze them. I do the same thing for soups, etc. I normally just pull one out the night before and then have a salad or vegetable with it the next evening.
Most things freeze well.

Everything I cook is usually for 4-6 servings---just me and DD now so what we don't eat, she takes to work for lunch and I eat for lunch. .But the one thing I do when I want to try a new recipe, is only cook 1/2 the recipe--just in case it is a dud. I don't have a fave recipe ------but have tried several that I will cook again.

@Zhills . As much as I do not like meatloaf, it is easy and then I have meals for 3 or 4 nights and a couple more in the freezer. I make sauteed vegetables for 4 nights . Now I have my meat and my vegetables for my meal. Chop meat, , I add package of Lipton Onion Soup mix along with 1 egg and some breadcrumb. Water if needed. Shape and put in 350 oven for approximately 1 hr. I use different amounts of chop meat so its hard to give the full recipe. But you get the idea. Its easy. I only have to cook for myself.

Soup! Basic heat and eat soup recipe is:
1 can Costco chicken breast (drain the salty broth off all or most)
1 can beans of any kind (rinse if you want thinner soup, add the liquid if you want thicker)
1 can diced tomatoes
Optional:
Frozen mixed veggies usually
Zucchini cut up if you have some
Onion
Bell peppersw
Leftover veggies
Corn
Hot sauce!
Tomato juice or sauce
Mushrooms
Celery
Pasta
Rice
Season with taco seasoning, Italian, Greek, Chili Powder, or whatever mood you are in.
If you like sautee the veggies first then add the canned things.
We also do leftover pork tenderloin pieces and hominy and canned mild peppers with taco seasoning and any of the above and that is a favorite!
Those small peppers are so easy to add to things--just wash and slice across into cute little rings! I always keep those.

Green Chicken:
several chicken breasts shredded or cubed (4-5 usually for an 8 inch pan)
top chicken breasts w/salsa verde
top salsa verde w/a boatload of various cheeses. I usually end w/Parm on top so when it's golden, it's usually done......bake at 350 until bubbly.
Koren Chicken BBQ - cook the salad veggies/noodles first. I usually add some extra broccoli but only use about 1/2 packet of Ginger dressing. Push veggies to the side of the large pan, add chicken pieces until warm, then add Korean seasoning.

Am i reading that you cook food, for yourself, that you dont actually like? Why do that when you dont have to? Maybe you'll get ideas here so you can enjoy eating.

When I do cook ( to be honest I mostly do sandwiches, salads, frozen meals or take out ) I do batch cooking.
Ill take 4-6 chicken breasts or 8 or thighs and rub with herbs and cook in the Instant Pot. I can add these along the week to sooo many applications.
I will cook my cheater version of chicken n dumplings (more like chicken stew) and portion that out or invite someone over.
Love scrambled eggs, tomatoes, onion and cheese and kielbasa if I have it. Toast with butter and jam ...and my bottle of ketchup. LOL Yum and comforting.
Spam stir-fry if I have rice from Chinese take out in the freeer and about bag of frozen veggies in my freezer. I have used cauliflower rice too. I freeze what I dont eat but it is a little-effort fast recipe for small serving.
I keep frozen meatballs on hand and portion out a serving and heat up with pesto or marinara and cheese and some bread if I dont feel like cooking pasta.
Pot stickers are a great idea to keep on hand thank you for the reminder.

Potsticker Soup for Me
I take a can of good chicken broth or just 1 cup for 1. Put in a small pot.
Add your favorite "dipping sauce" to the broth to taste! Yum! Go easy at first!
I prepare 4 potstickers in a small fry pan.
I cut a potsticker into bite size pieces. Some of the filling will fall into the soup. giving it the best flavor!
Heat and enoy! Couldn't be easier!
