LOL, I didn't even notice that.

 

My husband's nephew loves coconut more than I do.  I will make him these when we go visit next.

Just wanted to let you know I made these yesterday.   Instead of bars I cut them into 4 inch squares - just perfect for a scoop of dark chocolate gelato.  Made a quick raspberry sauce to drizzle over and garnished with a couple of mint leaves.  It was very pretty and tasty.  Thanks for the recipe.

@DiAnne that sounds so delicious! Yes, they are very "dessert-like", aren't they?

 

Thank you so much for the feedback! They are easy, too! I love it when crusts are made with melted butter and I dont have to cut it in!

Just made another batch of these.. I really dont think they are overly sweet..even WITH sweetened coconut..Now wondering about tweaking with some chocolate in the crust, perhaps? Or what about that new chocolate sweetened condensed milk in the filling?
