Who doesnt want to be in a tropical paradise rght about now? Next Best thing for coconut lovers...

 

Preheat to 350 and line 9x13 pan with parchment

 

Crust:

 

2 Cups flour

1 Cup packed Brown sugar

1/2 tsp salt

1 cup butter, melted

 

Mix dry ingred and add melted butter, press in to bottom of pan, bake 12- 15 minutes till light golden brown- cool 10 minutes

 

Reduce oven temp to 325

 

Filling:

 

3 eggs

1 can sweetened condensed milk

1/2 cup flour

1/4 cup packed brown sugar

1/4 cup bitter, melted

3 tsp vanilla

1/2 tsp salt

4 cups cocnut, diviededbrown sugar

 

Whisk first 7 ingredients and 3 cups cocomut in large bowl.. Pour over crust, sprinkle top with last 1 cup of coconut- Bake 25-30 minutes till light golden brown- cool, remove from pan and cut into bars.

Yummm.  Coconut is totally my weakness.   I'm almost glad my husband won't eat it.   I'm not sure if that means more for me, or I don't make it for that reason.

@DiAnne, I know its overkill, but yeah, I used the AngelFlake brand, though certainly you dont have to- its based on a Fllipino cake that is also  super sweet!

 

you could certainly use a coconut in a more "natural" state...

These sound so good and I'm going to definitely try them so thanks for sharing. Could you explain the very last line in ingredients. I understand about dividing the coconut but what follows that?

Sorry, you put three cups coconut IN the bars and sprinkle the last cup oer the top before baking.
