Your recipe sounds delicious! 😋 I'm going to try it this week. Question though, What does it mean "scale" under the ingredients? Does that mean,  "more or less" according to how much you want to make?



Yes @Starpolisher  I think that's what it means. I usually add more chicken and cheese than it asks for in the recipe. I've also used larger corn tortillas (you may have to microwave them a bit to get them soft first so they don't fall apart before you get the sauce on). I like them both ways.  Enjoy your carnitas and thanks for your kind response 😃

I will offer a former co-worker's recipe for Coconut Tres Leches Cake:

 

1 box yellow cake mix

1 15-oz can cream of coconut

1 12-oz can evaporated milk

1 cup heavy whipping cream

1 tsp vanilla

 

Bake cake mix in greased 9X13" baking dish according to directions.  Let cool on wire rack for 1 hour.

In blender, mix cream of coconut, evaporated milk, heavy cream, and vanilla until smooth.  Poke holes in top of cooled cake with fork.  Spoon some of milk syrup over top of cake and let soak in.  Spoon rest of syrup on top. Loosely cover with plastic wrap and refrigerate for 2 hours.

 

Serve with sweetened whipped cream:

 

1 cup heavy whipping cream

1/4 cup powdered sugar

1/2 tsp vanilla

 

Beat heavy cream in chilled big glass bowl with electric mixer until thickened.  Beat in

powdered sugar and vanilla until mixture forms stiff peaks.

@simplyfriends I did make this & it was a hit!

I doubled the recipe for the 5 grandsons, my husband, myself, my son & daughter in law.

We only ate one pan of them, so I have a pan for tomorrow night.
