Recipe author calls this summer spaghetti...have no idea why as it's yummy all year long. My sort of pasta meal...a few fresh ingredients and quick to prepare.
SUMMER SPAGHETTI WITH TOMATOES AND BURRATA - From D@@@ Delicious
INGREDIENTS
12 ounces spaghetti
3 tablespoon plus 1 teaspoon extra-virgin olive oil, divided
1 pound cherry tomatoes
4 cloves garlic, minced
1 shallot, minced
¼ teaspoon crushed red pepper flakes
2 teaspoons red wine vinegar
Kosher salt and freshly ground black pepper, to taste
8 ounces burrata cheese
1 cup torn fresh basil leaves
INSTRUCTIONS
In a large pot of boiling salted water, cook pasta according to package instructions; drain well and stir in 1 teaspoon olive oil; set aside.
Heat remaining 3 tablespoons olive oil in a large skillet over medium high heat. Add tomatoes, garlic, shallot and red pepper flakes. Cook, stirring occasionally, until the tomatoes begin to burst and have softened, about 5 minutes.
Remove from heat. Stir in red wine vinegar; season with salt and pepper, to taste.
Serve spaghetti immediately with tomato mixture, topped with burrata and basil.

Agree that this is a great salad for any time of the year, but it is my summer favorite. I've made it many times, but not with burrata. I use mozzarella.
In fact, as big of a cheese hound as I am, I've never had burrata, or frankly, heard of it. I had to look it up. It seems to have a much richer, creamy flavor than mozzarella, which can be fairly bland.
Very interesting search you sent me on :-). Seems like burrata is a very rich, high cal cheese that needs to be consumed as fresh as possible. Maybe that's why I've never seen it offered, but if I ever get a chance, I'm going to try some. Sounds like it would make this salad perfect.

OMG!!!!!!! Burratta is wonderful and rich and delicious and I would put it on shoe leather---I buy burratta with truffles in it----and have put it over hot pasta with nothing or loaded up with veggies/meat sauce, anytime of year.

All the stores in my area have grape tomatoes which drives me crazy. I prefer cherry tomatoes and this recipe won't taste right without them. I'm ready to make this as soon as I can find the right tomatoes. Looks delish.

I've also used Campari tomatoes that I qtr...love the sweetness of those tomatoes.
"Campari is a type of hybrid tomato noted for its juiciness, high sugar level, low acidity, and lack of mealiness. Camparis are deep red and larger than a pear or cherry tomato, but smaller and rounder than common plum tomatoes."

@kate2357 I love Campari tomatoes. I make Anthony Tucci's
summer pasta, which is similar. I use plum tomatoes,
fresh mozzarella and fresh basil, in his recipe.

@Mindy D All we see are grape tomatoes and Campari ( which I love). I have'nt seen cherry tomatoes for a long time.
I make Anthony Tucci's summer pasta and that recipe uses
plum tomatoes. He quarters them but I cut them into 8ths.
His recipe uses fresh mozarella and fresh basil. No hot peppers.

@kate2357 , I like this!! Will make it. I often make roasted grape tomatoes, with olive oil, garlic, basil, and a drizzle of balsamic...I top them with alot of dishes. Sometimes just with fresh sliced mozzarella and basil.
Of course, Italian bread to dip. 🍷🍷
