I have two receipes.  One is for regular muffins but is dry.  The other is for jumbo ones but is very dense.  Even though I have tried to tweak the time and ingredients, I can't seem to get the perfect muffin.

I make this recipe from my high-school cooking class back in the Dark Ages:

 

1/4 cup vegetable oil

1/4 cup butter, melted

1/2 cup sugar

1/2 cup brown sugar

2 eggs

1/2 cup buttermilk

1 tsp vanilla

2 cups flour

1 1/2 tsp baking powder

1/2 tsp salt

1/4 tsp baking soda

1 1/2 cups chocolate chips

 

Whisk oil, butter, and both sugars in bowl.  Mix in eggs, buttermilk, and vanilla.

 

Pour in flour, baking powder and soda, and salt.  Pour in chocolate chips on top. 

 

Stir until there are no dry streaks.  Don't over mix.

 

Spoon evenly into paper-lined, 12-cup muffin tin. 

 

Bake at 350 degrees until toothpick comes out clean, 18-20 minutes.

Deepwaterdotter, thank you.  I have all the ingredients except the buttermilk.  Your receipe sounds good.  I will try this week.

@lilypadfrog when a recipe calls for buttermilk, i put 1 tablespoon vinegar and fill the cup with milk and wait 10 minutes.

If you use "mini" chips, they won't sink to the bottom of the muffins.

I forgot to mention that the jumbo muffin receipe can be used for Apple, blueberry if you dont use the chips.  I frequently pour the batter in the muffin cups then add chips or apple or blueberry etc.  I can have different flavors in the same batch that way.

I love the Easy One Bowl Chocolate Chip Muffins on Mel's Kitchen Cafe website.

 

I just realized it's identical to the recipe given above. I use the option of 1 cup of chocolate chips, and sprinkling the top with coarse sugar or sparkling sugar.

 

They are delicous!
