No this is definitely not a low fat casserole, but it has that Latin flair taste, and really is so darn delicious, and so hard to resist unless made sparingly. 

(We have this every other month, and it is a favorite we love).

Chile Rellenos Casserole Recipe:

Bake in an  8X8 pan

 Servings 2-4

• 1/2 lb. ground beef (or ground turkey or chicken)
• 1/4 onion (chopped)
• 1 10 oz. can whole green chilies (or 2 roasted fresh green chiles)
• 1 1/2 cups cheddar cheese
• 2 eggs
• 3/4 cups milk
• 1/8 cup flour
• 1 tsp cumin
• 1/2 tsp salt
• 1/2 tsp pepper

Preheat oven to 375F. Cook hamburger meat and onion. Drain, then add cumin, salt, and pepper.

Spray your pan lightly with non-stick cooking spray, then line the bottom of your pan with whole green chiles (chop extra green chiles for later)

Layer meat over green chiles. Top with cheese and chopped green chiles. Whisk together eggs and milk, then add flour and mix well. Pour this mixture over dish. Bake for 35 to 40 minutes.

Enjoy..... and this is what we will be making this week,  especially since it is so good, and hubby requested we make it together, and as they say "Ain't love grand"

Yep, adore I am an incorigible early bird . . . I log in when I eat breakfast but since it's usually still dark I head back upstairs for a bit.

I just bought a beautiful package of ground beef for that chile rellenos casserole.  That will probably hit the menu on Wednesday or Thursday.  It's still too hot here to think about turning on even the toaster oven for any length of time.

I'll let you know how I did but I know it will be a winner and easy!
