Chicken Tahitian
3 chicken breasts..split
1/3 cup salad oil
1 6 ounce can pineapple-orange juice..UNDILUTED
1/4 cup butter
1 teaspoon ginger
1 teaspoon soy sauce
1 avocado, peeled and sliced
3 cups cooked rice..warm
1/2 cup macadamia nuts...chopped
Saute chicken in oil turning several times til lightly browned. Place in shallow baking pan in a single layer. Heat juice, butter, ginger and soy sauce til blended. Brush over chicken. Bake at 350* 35-40 minutes, basting several times with the sauce til chicken is glazed and tender. Brush avocado slices with lime juice. Arrange chicken and avocado slices on top of the rice. Sprinkle nuts over all. Serve with any remaining sauce. Serves 3
