If you like caprese salad then you'll love these. The mushrooms just take it to another level!
I love to grill these but if you prefer the oven, they'll still turn out great. Light and summery.

Caprese Style Portobellos

6 large portobello mushroom caps, gills removed
1 pint of cherry tomatoes, roughly chopped
1 cup of shredded mozzarella
(mixed with 1/3 cup of shredded Asiago or Gruyere) optional
1/3 cup chopped, fresh basil
1 clove of garlic, minced
Extra virgin olive oil
Balsamic vinegar
Salt and Pepper to taste

Brush all the mushroom with olive oil.
In a bowl mix the chopped tomatoes and garlic with the fresh basil and some salt and pepper. Drizzle with olive oil. Let it sit for a few minutes to let the flavors blend.

Sprinkle the cheese(s) on the bottom on the mushroom caps
Spoon on the tomato mixture

You can either bake these in a preheated oven at 400 degrees until the cheese gets brown and bubbly or you can put these on the grill. (my favorite!)

Once done, drizzle with the balsamic before serving.

Either way... DELICIOUS!!
