Cabbage recipe suggestions anyone?

My favorite by far is the Rueben sandwhich but I'm open to other suggestions:

@Houstonoilers  I love me a good Reuben! I just had one today! Here's a cabbage casserole we found at the Pennsylvania Farm Show many years ago. Real comfort food! I have some healthy changes suggestions at the end of the recipe.

 

Ingredients: 8 slices of bacon – sliced into tiny strips crosswise

1 large onion, diced

6 cups cabbage, finely shredded

3 oz lite cream cheese, cut into small chunks

1 cup sour cream

Salt and pepper to taste

1 ½ cups shredded sharp Cheddar cheese

2 Tblsp. Bread crumbs

 

Directions: Preheat oven to 375 degrees.  Fry bacon until crisp. (At this point you may drain some fat from the pan or not).  Add onion to the pan and soften, typically only a few minutes.  Add cabbage and salt and pepper and stir.  Cover the pot and cook cabbage until it is wilted but still a bit crisp.  Stir in cream cheese until melted, then add sour cream. Pour cabbage mixture into a casserole dish. Alternate layers of cabbage mixture with cheese.  End with a top layer of cheese. Top with bread crumbs. Bake uncovered for 20 to 30 minutes until everything is brown and bubbly.

 

Healthy changes: Drain all but 1 or two tablespoons of fat before adding the onion.  Use 1 cup of nonfat plain Greek yogurt instead of the sour cream – just try it; you can’t tell the difference.   Eliminate the bread crumbs.  Also, if you use the very best block of sharp Cheddar cheese you can find (I like Cabot extra sharp), you won’t have to use quite as much to still get the flavor.

Cabbage eggs

 

Slice half a head of cabbage in small pieces, add 1 chopped onion, mix together ~

 

in a separate bowl, mix  3 eggs, 1/4 cup of flour, little salt and pepper, then add to cabbage and onions mix well.

 

heat medium sized frying pan with 1-2  tbsp EVOO or bacon grease, put in pan like a big pancake, cover and cook 15 minutes and then flip for another 15 minutes.  It tastes better the second day, i like it with spaghetti sauce or plain.  Enjoy

@Houstonoilers My favorite is Spanish Slaw. It was featured at Luby's Cafeteria. The recipe is online under Spanish Slaw Luby's. The version I saw had 5 Stars.

there are so many....just google unstuffed cabbage roll casserole....basically cabbage....hamburger...rice...and tomatoes.....

Boiled Cabbage in Cheesy White Sauce

Cabbage:

1/2 cabbage.  Cut into quarters, then slice into thick shreds.

2 pinches Salt

Water

 

Cheesy White Sauce:

2 Tbsp Butter

2 Tbsp Plain Flour

1 cup Milk

1/4 cup shredded cheese (Your favorite)

Salt & Pepper

Cook cabbage, covered, for 10 minutes in small amount of water; drain.

 

  1. Melt butter in a saucepan over medium heat.  
  2. Add flour and cook, stirring with a wooden spoon, until mixture bubbles.  
  3. Gradually add milk, constantly stirring.
  4. Bring to the boil, then reduce heat to simmer, stirring constantly, until mixture thickens. Add shredded cheese and mix well.
  5. Season with salt and pepper.

Got my kids to eat veggies using the cheesy sauce!

my MIL introduced me to an easy recipe:

 

 sliced thin cabbage with match stick carrots in butter cooked low and slow in a fry pan. The cabbage and carrots turn nice and sweet.

Recipe I learned from my DH's mother who was from Europe.

 

Fry cabbage, with or without onions, in butter or a little oil.  Then add salt, pepper. When the cabbage is cooked add pre cooked bow tie pasta (farfalle).  You can fry the cabbage with bacon if you like.

 

It is simple, but really good.
