I recently tried this for the first time and its a hit. I'm changing it up a little since making the peanut dressing I didn't get it totally chopped and a piece of apple was excellent. I'm changing my dressing to a store purchased mild Thai Peanut dressing and adding the apple. YUM
Slaw Ingredients
5 cups shredded cabbage (or I used the bag of slaw mix at Trader Joes)
1/2 red bell pepper, thinly sliced (I would lighting roast this in a nonstick next time -sweeter)
2 green onions, thinly sliced (whole stem)
2 tablespoons of chopped fresh cilantro (this is optional - I HATE cilantro)
2 tablespoons chopped of fresh mint
1 C. raw green peas, fresh or frozen
1/2 C. roasted peanuts, coarsely chopped
2 1/2 C cooked and cubed chicken (optional)
Lighting coat with peanut dressing. More to your taste.
I use Litehouse, Mild Thai Peanut Dressing/Marinade. Just a little spice, not too much. I'm not one for hot or spicy.
