These are delicious and so easy!

 

2 pounds bone in/skin on thicken thighs
Kosher salt
Fresh cracked black pepper
3 T olive oil
1 T ground cumin
2 t soy sauce
2 cloves garlic, minced
Chopped cilantro for garnish

 

Preheat oven to 375.  

 

Season chicken with salt and pepper to taste.

 

In a large bowl combine olive oil, ground cumin, soy sauce and garlic.  Toss the chicken in the mixture.  

 

Lay the chicken on a parchment lined baking sheet skin side down.  Bake for 25 minutes.  Turn chicken over and bake another 15 minutes until cooked through. 

 

Place on platter and garnish with cilantro.

Cumin is a spice often found in Thai foods, which is one of my favorite types of foods. Going to give this a try, but will remove the chicken skin. I'll probably serve with wild rice and lots of pieces of peppers (green, red, yellow, and orange), onions and mushrooms. Or, I may cook it all together on the grill to keep my kitchen cooler.
