For tonight's Sunday dinner, I used a pound of ground pork that I had in my freezer.  I had picked it up a month ago, for a specific recipe, but I was always two ingredients short to make it.

 

So, I used it to make breaded ground pork patties.   I had no clue whether this was a good idea or a bad idea as I have never even thought about breaded ground pork patties.  However, the recipe was easy and I had all the ingredients and I wanted to get rid of that frozen pork.  I was ready to experiment.

 

I think it was a success!

 

To the pound of thawed pork (twice ground as I do not like coarsely ground pork) I added:

1 small onion, finely chopped

1/2 tsp garlic powder

1 1/2 tsp thyme

1/2 tsp salt 

1/4 tsp ground pepper

 

I made four patties and dipped them into two beaten eggs and then into a plate of unflavored bread crumbs to coat.

 

I heated up my cast iron frying pan and added 2 Tablespoons Olive Oil and 1 pat of butter.   I cooked my patties on medium heat (about 5 minutes on each side) until they were golden brown on each side and then put the frying pan in a 375 degree oven for 12 minutes (when I pulled them out they were done, slightly above the 165 degees needed for pork). 

 

The rest of my menu came from my garden. 

Roasted honeynut squash

Mashed potatoes with carrot puree swirl (I got this idea from a restaurant.  They were able to make lowly mashed potatoes look like art!)   

Sauteed apples

Green beans

 

I'll be putting another pound of ground pork in the freezer!

@rrpell One of the most delicious meat loafs I ever had was half ground pork and beef baked in mushroom gravy.  The sandwiches were heaven!!!Smiley Happy

 

Mushroom Meatloaf or Burger Bundles

350 degrees

 

2 lbs ground round (or I lb ground round and one lb ground pork, not sausage, ground.).

2 pieces of well toasted bread, crumbled

2 stalks celery, chopped

1 med onion, chopped

1 egg

Milk to moisten

2 cans Campbell’s mushroom soup with 1 ½ can water, mixed

Mix all EXCEPT SOUP AND WATER.

Form into a loaf in a 9 x 13 casserole.

Bake for 45 min to 1 hr, and spoon off all fat. 

Add mushroom soup and water.

Bake for an additional 1 –1 ½ hr, basting frequently until gravy thickens.

 

For Bundles, Patty out the size of hamburgers.

                      Lightly brown in frying pan, spoon off grease.

                      Add soup and water.

                      Lightly simmer and baste until gravy thickens.

@rrpell  This looks like a tasty recipe.  I'm going to add a tablespoon of Worcestershire sauce because I love the flavor when added to meat.

Oh wow...these sound delicious!  I'm going to make them without the breading.  I'm on keto, so no carbs (except for non starchy veggies and nuts).

Oh, that sounds like a wonderful meatloaf.  I especially like that it makes a gravy.  My meatloafs are alway topped with the "piquant" sauce (ketchup, brown sugar, dried mustard).  That was the way my mother did it and I just naturally do the same.  Thank you for posting as I definitely will make it and look forward to the next day sandwiches!

@rrpellHoney, that recipe is over 70!  years old!  My grandmother's house keeper made it and I've always loved and made it.

 

My Foods classes absolutely loved the burger bundles with mashed potatoes and steamed vegetables.  They couldn't believe I let them use canned soup in place of making it.  It was rare that I let them use convenience foods.  That's why a lot are five star chefs.

 

When our older son was about ten he came home from a friend's home after spending the night. 

The mother had made traditional meatloaf.

DS thought he had had a VERY strange dinner. 

Imagine the look on his face when I explained that WE were the strange ones!!!Smiley Happy

Does anyone have the recipe for grits with ham and cheese that was cooked in the Cooks Essentials pressure cooker by David and Meredith?  It looked so good.  Thanks.

@Annabellethecat66  OMG Spatini! I have not thought about that sauce mix in years. My friends Mom always used Spatini when she made spaghetti back in the late 50's and I loved it. My Mom would never use it, she always made her own sauce, it was ok, but I have to say the Spatini sauce mix was better. IMO
