Can I freeze Napoleons from the bakery?  I tried looking up this information and all I found was that not all pastry cream is created equal and some do not survive freezing. I don't really care if it doesn't survive. I just want to make sure if it's eaten after frozen that no one gets sick.  Thank you.

Re: Napoleon Pastry Question

I don't have an exact answer to your question, but I do know you can freeze eclairs.  I know they are not the same, but they both have the creme filling.  Hope this is somewhat helpful.

@Deree

If it is from a local bakery, I would call and ask.

I buy frozen  napoleans and thaw as needed, so in my experience yes, they can be frozen. This may or may not pertain to your product.

That's a good idea @nomless.  I'm able to call the bakery. Thank you.

Re: Napoleon Pastry Question

when you buy them from safeway they come frozen to the store, and they thaw them.

i can't imagine what would make you sick from freezing.

personally i would.

Re: Napoleon Pastry Question

it is not a good idea to refreeze something.  also it depends on what is in the pastry creme.  if it cntain s sour cream or cheese cheesethen you can freeze it but it will not be as good

Re: Napoleon Pastry Question

@Deree

Tried answering on the day you posted, but the system was slow, at least at my end, so here I am back way late.

The thing with Napoleons is not the creme pat, it's the puff pastry.  You can double wrap each piece and freeze it, but in the thawing process, the creme pat will totally decimate the puff pastry and you'll end up with a gloppy mess.

I always purchase from a bakery with an excellent rep and eat the same day.
