Found this recipe on line and tried it last night. Very tasty.
2 cups butternut squash (cut in 1 inch cubes)
1 T olive oil
2 cloves chopped garlic
2 t grated ginger
1/2 cup coconut milk
1 T brown sugar
1 T lime juice
1 T fish sauce
1/2 t sriracha
2 T unsweetened shredded coconut (toasted)
2 T chopped cilantro
Heat oil in frying pan. Add garlic and ginger and saute about 45 seconds. Add rest of ingredients except coconut and cilantro. Cover and simmer until squash is tender (about 20 minutes). Remove the squash and to serving dish. Reduce the liquid in frying pan and pour over squash. Garnish with toasted coconut and cilantro.
I buy the squash that is already peeled and cubed because I am afraid I am going to lose a finger cutting it up!

Sriracha is a hot chili sauce. You could substitute another kind or leave it out.
