@eddyandme   This Vegetable casserole is excellent and is very tasty.

 

Vegetable Casserole

2 qt. casserole

350 degree oven

 

1 pkg. 10 oz. frozen califlower  *

1 can 15-1/2 oz. cut green beans drained

1/2 c. chopped onion

1/2 c. chopped celery

1/2 teaspoon seasoned salt (Lawry's)

2 cans cream of mushroom soup

1 cup Pepperridge Farm seasoned stuffing mix (not the cubes) which is smashed up pieces.

1/4 c. butter

1/2 c. or more of shredded Colby or Mild Cheddar Cheese

 

*I buy fresh califlower and cook instead of the frozen but you do not need to do this but it is a suggestion.

 

Cook califlower until tender but still firm & drain whether frozen or fresh).  In bowl mix califlower, green beans, onion, celery, salt & soups & stuffing mix.

 

Turn into casserole and dot w/butter.  Bake 30 min.  Remove from oven and sprinkle top with cheese and Return to oven for 8 minutes.  

 

You can make at home and it can be warmed in microwave.

@eddyandme Before taking anything I think you should *ask* them if there is something you can contribute.

 

Since you say you aren't a good cook, why offer something you have to cook? Some people do not want company bringing additional food.

 

Ask them first. Bringing unwanted food could be very awkward. I saw this happen one time and it wasn't pretty! and no it wasn't me who did it!

@eddyandme  What about some of the beautiful breads or rolls that wegmans or local bakery sell.  I saw rolls in the shape of a christmas tree and thought it was very clever.

How about a hot artichoke and spinach dip with crackers.

The recipe is on the back of the Knorr vegetable packet.  Simple and delish.

@hayseed00 That's a great idea - rolls or bread.  I never thought of that.

 

At our big dinners - we'd me eating and suddenly my Mom would jump up from table - oh, I forgot the rolls in the oven!

(again and again - good laugh)

I agree with @Love my grandkids in regards to bringing something.  I would ask first and make your offer.  They may say...great...casserole would be good...or may say...thanks but, we are all set.  That said, I am posting an easy vegetable casserole I fixed for Thanksgiving.  It was a hit!!  As an alternative, I might take a small floral arrangement....or gift bag of coffee cake or breakfast rolls for them to enjoy morning after...even special jams, etc.  To hosts who enjoy "spirits"....even a bottle wine or after dinner drink like Bailey's Irish Cream or Rum Chata....both very good!!  OK...here's recipe....

 

Broccoli-Corn Casserole

 

1 pkg. frozen chopped broccoli, thawed

1 can Cream-Style Corn

1 tablespoon minced onion

2 cups Pepperidge Farm Stuffing Mix (classic, already crushed)

1 stick butter, melted

 

Combine stuffing mix with melted butter.  Stir 3/4 cup of that with all other ingredients.  Place that mixture in a greased casserole dish (about 9x9" size or similar...square or rectangular).  Place remaining crumb mixture on top.  Bake at 350 for 30 minutes, uncovered.

Maybe a layered salad - lettuce, spinach, red onion, mushrooms, hard boiled eggs, shredded cheese, bacon and peas.  I make a dressing that I put on as the last layer - I mix mayo, sour cream, lemon jiuce and sugar to taste.  We love it!

  Corn Pudding Casserole

 

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 large eggs, room temperature
  • 1 cup sour cream
  • 1 package (8-1/2 ounces) cornbread/muffin mix
  • 1/2 cup 2% milk
  • 1 can (15-1/4 ounces) whole kernel corn, drained
  • 1 can (14-3/4 ounces) cream-style corn

Directions

  1. Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in sour cream. Gradually add muffin mix alternately with milk. Fold in corn.
  2. Pour into a greased 3-qt. baking dish or 13x9-in. baking pan. Bake, uncovered, until set and lightly browned, 45-50 minutes.

I read something on the boards recently that I totally agree with.......not to bring added dishes when going to dinner at someone's house. The host knows how many people invited and has enough food. Not to mention if something has to be heated will there be enough room in the oven. Bring a bottle of wine, even the bread if you feel you must contribute food. I think flowers, a box of chocolates or anything else that does not have to be used for that dinner is more appropriate.
