Buttermilk Cornbread

1 stick of unsalted butter (I sometimes use a couple tablespoons less)

1/4-1/2 cup sugar (1/4 cup is just right for us)

2 eggs, beaten

1 cup buttermilk

1/2 tsp. baking soda

1 cup cornmeal

1 cup all purpose flour

1/2 tsp. salt

Preheat oven to 375. Put stick of butter in cast iron skillet and then place in oven to melt. When melted, swirl it around the skillet to grease it, then pour butter into a large bowl. Stir in sugar, mix well then add eggs, beat until well blended. Combine buttermilk and baking soda until soda is dissolved. Stir into egg- sugar mixture. Combine cornmeal, flour and salt; pour into wet mixture and stir until blended. Don't over mix. Pour into buttered skillet. Bake 30-40 minutes or until golden brown on top.
