Just made this for my mom for her birthday. She is a pineapple nut and it was fantastic. Very easy and a great desert, especially for summer.
CRUST: 2 1/2C crushed pretzels; 3tbs powdered sugar; 3/4C butter
Mix together and press into a 13 x 9 inch pan
FILLING: 8oz cream cheese, softened; 1/2C sugar; 8oz Cool Whip
Cream sugar and cream cheese together until mixed well, about 3-5 minutes. Fold in cool whip and pour over crust.
TOPPING: 1 can crushed pineapple; 2tbs cornstarch
Cook on stove until thickened. Cool and pour over filling.
Ir didn't call for it, but I spread another 8 oz container of Cool Whip over the top. It was delicious!
